Friends have been asking me where I BOUGHT the chicken salad I posted on Twitter yesterday.

First thing……  don’t be silly!  Why would I BUY this when I can MAKE it in 10 minutes from fresh low human intervention ingredients.


INGREDIENTS (makes 2 portions)

1 lettuce

1 kiwi

1 avocado

1 organic chicken breast (skinless and boneless)


2 teaspoons whole grain mustard

1 teaspoon manuka honey

juice from half a lemon

2 teaspoons extra virgin olive oil

4 teaspoons balsamic vinegar


Line 2 bowls with clingwrap (plastic film) . Shred the lettuce, slice the kiwi, slice the avocado.

cut fat off chicken and thinly slice. Quickly fry in a non-stick pan (then you won’t need oil or fat)

Allow the chicken to cool.

Layer, shredded lettuce, avocado, lettuce, chicken, lettuce and kiwi, finishing with a layer of lettuce and pressing it down into the bowl as you go.


Fold the plastic film over the top and chill in the fridge for an hour.


Meanwhile make the dressing in a jar.  Add all ingredients and shake to mix then keep in the fridge.  Taste and adjust/add ingredients to suit. There is more than enough dressing to do these 2 salads and have some left over.

Once chilled, remove the salad from the fridge.



Open the top of the clingwrap.




Place a plate over the top of the dish.  Quickly flip over.



Ease the bowl from the top.




Remove the clingwrap.



Slice some orange to dress the plate.


Pour over a spoonful of the dressing and enjoy.



For a fishy alternative, layer with prawns and pineapple instead of chicken, kiwi and avocado.  Enjoy!!
